Christmas special: Two must-try yummy dessert recipes

Christmas and cakes go hand in hand. It is that time of the year where all things sweet and savoury symbolise  festivity, happiness and the good things in life. Here are two dessert recipes that you must try out.

Warning: What you read can give you serious dessert cravings. So keep your oven and ingredients ready!

 

Recipe

Banana Pan Cake

You will need

1 cup all purpose flour

½ cup white sugar

¼  teaspoon salt

2 teaspoon baking powder

2eggs, beaten

1 cup milk

2 tablespoon vegetable oil

2 ripe banana, mashed

Procedure

  1. Combine flour, baking powder and salt in a bowl.
  2. In a separate bowl, mix together egg, milk, sugar, oil and bananas. (mix well)
  3. Mix the dry mixture to banana batter. Fold; Dont beat. Beating may result in formation of air bubble.
  4. Heat lightly oiled frying pan at low flame.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
  6. Serve hot with ice cream or whipped cream according to preference.

 

 

Cake and custard

You will need

2 cups white sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

3 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water/milk

Procedure

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
  2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. (all dry ingredients)
  3. In another bowl beat the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last.
  4. Mix the dry ingredients in it, just fold them. Dont beat. Batter will be thin. Pour evenly into the prepared pans.
  5. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
  6. Apply chocolate spread on the cake.

 

Custard

You will need

600ml full fat milk

3 drops vanilla essence

3 eggs – yolk only

2 tbsp – corn flour

25 – 40gms – sugar

 

Procedure

1. Heat the milk with vanilla essence, dont boil. Just before it boils

  1. In a bowl, mix egg, sugar and cornflour into a smooth paste.
  2. And milk and mix well. Strain the mixture into a saucepan and cook gently until it thickens.

 

Cake and custard

In a serving bowl, fill ¼ of it with custard and put the cake (wholecake or slice) in it.

To garnish add dry fruits or whipped cream (according to the preferrences)
