How about enjoying Egyptian tea and cookies with your friends sitting on your terrace and enjoying the rains. Sounds great isn’t it ?

Here are those 2 simple recipes which one can easily prepare at home and surprise the guests.

 

Karkade[ Hibiscus Tea ]

 

Boil 2 cups of water, and add some Ginger slices. To this add 3 – 4 tablespoons  of dried hibiscus. Boil for 2 – 3 minutes and then remove from flame. Let this mixture cool down for few minutes and then strain the mixture into a glass jar and let it refrigerate for 15 – 20 minutes. Sugar syrup , honey or lemon can be added as per one’s taste.

Your chilled Karkade is ready to serve.

 

Kahk[ Egyptian cookies ]

This is a popular Traditional Egyptian dessert which is served in many Middle East household since ages.

To prepare this, melt some ghee in a thick bottom pan, and then gradually add sesame seeds, all-purpose flour and keep on stirring. Remove from heat and add powdered sugar, a pinch of salt and allow it to cool. Then add little yeast, some milk and allow the dough to rest for 1 hour.

For the cookie filling, one may use walnut paste mixed with honey and butter or else one can opt for dates filling as well.

Now, one needs to cut equal sized balls from the dough and put the filling inside. Give it a round cookie like shape and then with the help of a fork press it a little from top. This is now ready to bake at 420 degrees for 20 minutes.

Once the cookies turns golden in colour, remove from oven and allow it to cool. Dust some icing sugar on top, and it is ready to be eaten.
